Two words that diverge in one aisle

Two of these deserve a flag because they rarely appear on a label at all.

Isinglass and animal rennet are processing aids. They act during production and are largely filtered out of the finished product, which in most jurisdictions means they escape the ingredients list entirely. A cask ale fined with isinglass and a cheddar set with calf rennet can both read as blameless on the pack. Why the label stays quiet

Under EU and UK rules an additive must be identified by its function and either its name or its E-number. Origin enters the picture only when the additive is also a listed allergen, which in practice means milk and egg.

That rule does more work than it first appears to. Bolded milk beside an emulsifier settles the question immediately. The same goes for egg. What it cannot do is flag tallow, because beef is not an allergen in EU or UK law, so a tallow-derived batch of E471 has no labelling duty whatsoever.
