Tallow is produced by rendering, a process in which raw fat trimmings from cattle or sheep are heated until the fat melts and separates from water, connective tissue, and protein residue. Traditionally, tallow is rendered from suet, the hard fat surrounding the kidneys and loins, though industrial rendering also uses fat trimmings from other parts of the carcass. After melting, the liquid fat is strained or centrifuged to remove solids, then cooled into a firm, waxy material that stays solid at room temperature.
Rendering is carried out on an industrial scale as part of meat processing, which makes tallow an animal byproduct rather than a primary product. Because it is inexpensive, stable at high temperatures, and slow to spoil, tallow has historically served as a frying fat, a soap base, a candle material, and an industrial lubricant. Modern rendering operations also supply tallow to the oleochemical industry, where it is split into fatty acids and glycerin that are used across cosmetics, detergents, and general manufacturing.
