Bone phosphate is derived from the bones of slaughtered animals, most commonly cattle and pigs, as a byproduct of the meat industry. The bones are typically cleaned, degreased, and treated with hot water and steam to remove organic material such as collagen and fat, leaving behind the mineral fraction of the bone, which consists largely of calcium phosphate. The resulting material is ground into a fine, odorless white powder.
In food applications, this powder functions primarily as an anti-caking agent, keeping dry powdered products free-flowing, and as a mineral source in some supplements. Because the finished powder is chemically similar to calcium phosphate produced from mined phosphate rock, the two are effectively indistinguishable in the final product. The only difference is the raw material at the start of the process: animal bones in one case, mineral rock in the other. This is why the ingredient's animal origin cannot be detected by inspecting the food itself.
