Made From Rock, Used On Meat

Triphosphates come out of the same mineral chain as every other phosphate additive. Sedimentary phosphate ore is digested in sulfuric acid to give phosphoric acid, purified to food grade, and neutralized with sodium or potassium carbonate. Heating the orthophosphate salt drives off water. Three phosphate units condense into a linear chain. The result binds calcium and magnesium ions tightly and raises pH, and those two properties do all the work in food.

The irony for a vegan reader is that a purely mineral additive sits mostly on animal products. Ham, bacon, sausage, chicken portions, frozen fish, and shellfish carry the bulk of E451 use. Where a label shows E451 on a plant-based product, the sourcing answer is the same, since the additive itself has no animal route.

The Water-Holding Trick

Muscle proteins hold water in a narrow pH window, and slaughter drops meat pH toward the point where those proteins hold the least. Adding triphosphate raises the pH again and pulls calcium off the protein filaments, which lets the meat structure swell and take up brine. Processors use that to increase yield. Injected ham gains weight, chicken breasts stay moist through cooking, and frozen prawns and scallops are dipped or soaked so they do not dry out in cold storage.

The added water leaves again in the pan, which is why heavily treated seafood shrinks and releases liquid. EU rules cap added phosphates and require them to be declared, and some categories have limits on total added water. Fresh, untreated seafood is sold as dry-packed or additive-free in markets where the distinction matters to buyers.

Intake and the Detergent Connection

EFSA re-evaluated the phosphates in 2019 and set a group acceptable daily intake of 40 mg per kilogram of body weight per day expressed as phosphorus, noting that high consumers of processed food can exceed it. People with chronic kidney disease are usually advised to limit phosphate additives, since additive phosphorus is absorbed far more readily than the phosphorus in whole foods.

Outside food, sodium tripolyphosphate was for decades the main builder in laundry detergent. It softened water so surfactants could work. Phosphate runoff drove algal blooms in lakes and rivers, and the EU restricted phosphates in consumer laundry and dishwasher detergents from 2013 and 2017. That environmental history belongs to detergent volumes, which dwarf food use. It says nothing about the additive's origin, which stays mineral.
