Mineral salts made from phosphate rock. Phosphoric acid from mined ore is neutralized with sodium or potassium carbonate, and the resulting orthophosphates are heated until three phosphate units condense into a chain, releasing water. The product is a white powder that binds metal ions and holds water.
Commonly Found In
Processed and cured meats, ham, sausages, frozen fish and shellfish, scallops and prawns, processed cheese, canned soups, and instant noodles. Also a major ingredient in detergents.
Vegan Alternative
No substitute needed on sourcing grounds. E451 is a mineral additive, though it appears most often in animal products.
