The Color in Every Cola

Class IV caramel exists because carbonated soft drinks are hostile to most colorants. A cola sits around pH 2.5, spends months on a shelf, and must look identical in the first bottle and the last. Cooking sugar with both sulfite and ammonium compounds produces a colloid with a strong negative charge, which stays evenly dispersed in that environment for the full shelf life.

By tonnage, E150d outsells every other food color on earth. Cola alone accounts for most of it, with iced tea, sauces, and confectionery taking the rest. The carbohydrate that goes in is plant. Telling the Caramel Classes Apart on a Label

Labels rarely help. EU ingredient lists give either the class number or the words "caramel color," and United States labels almost always use the generic phrase without specifying which of the four classes is inside. A reasonable rule of thumb covers most products. Aged spirits use E150a, beer and soy sauce use E150c, and acidic soft drinks use E150d. E150b, caustic sulfite caramel, appears in some spirits and vinegars. For vegan purposes the distinction does not matter. All four classes start from plant carbohydrate and use mineral or synthetic reagents, so any caramel color on any label is vegan.
