Starch, Hydrogen, and a Nickel Catalyst

Sorbitol production begins where most starch chemistry does. Corn, wheat, or cassava starch is hydrolyzed with enzymes into a high-glucose syrup, which is purified and concentrated. That syrup is then hydrogenated: hydrogen gas under pressure over a Raney nickel catalyst adds across the glucose molecule's aldehyde group, turning it into a six-carbon sugar alcohol.

The catalyst is filtered out and recycled, and the product is either crystallized as sorbitol powder or sold as a 70 percent syrup. Plant starch, hydrogen, and a metal catalyst make up the whole input list. The enzymes used for starch hydrolysis are microbial. No animal-derived material appears anywhere. The same holds for the other polyols: mannitol (E421), maltitol (E965), xylitol (E967), and erythritol (E968). Lactitol (E966) is the exception, made from lactose and so dairy-derived.

Why Sugar-Free Gum Uses It

Oral bacteria cannot ferment sorbitol into acid the way they ferment sucrose. The additive does not feed tooth decay. Dentists and dental associations have backed sugar-free gum on that basis for decades, and toothpaste uses sorbitol as both a humectant and a sweetener. The cooling sensation in mints comes from sorbitol's negative heat of solution: dissolving it absorbs heat from the tongue.

Xylitol does the same more strongly. Sorbitol also holds moisture, keeping soft cookies chewy and dried fruit pliable, and it resists crystallizing, which stops sugar-free confectionery going grainy. Diabetic ranges use it because it raises blood glucose slowly, though it is not calorie-free and portions still count.
