A mineral sulfite salt. Elemental sulfur, mined or recovered from oil and gas processing, is burned to sulfur dioxide, and that gas is passed into a sodium carbonate or sodium hydroxide solution. Crystallizing the product gives sodium metabisulfite, a white powder that releases sulfur dioxide when it meets water or acid.

Dried apricots and other dried fruit, wine and cider, fruit juices and concentrates, potato products and frozen chips, vinegar, sauces, some baked goods, and shellfish treatment. Also used in photography and water treatment.
