Dipotassium phosphate is the reason a non-dairy creamer does not curdle in hot coffee. Coffee is acidic enough to break the emulsion, and the phosphate buffers the pH upward so the fat stays dispersed. Plant milks use the same trick, which is why an oat or soy barista blend lists a phosphate and a standard carton often does not.

Three Salts, One Mineral Route

Phosphoric acid has three acidic hydrogens, so neutralizing it with potassium base can stop at one, two, or all three. Monopotassium phosphate (E340i) is mildly acidic, dipotassium phosphate (E340ii) is close to neutral, and tripotassium phosphate (E340iii) is alkaline. Formulators pick the one that lands their product at the pH they want. The acid comes from sedimentary phosphate rock. Digestion in sulfuric acid and purification to food grade follow.

The base comes from potassium chloride mined from evaporite deposits and converted to potassium hydroxide by electrolysis. Rock and brine make up the whole input list. There is no fermentation on animal substrate, no rendered fat, and no bone in any part of the process. The one bone-derived phosphate additive is E542, which sits under its own number precisely because its origin differs.

The Coffee Creamer Problem

Hot black coffee sits around pH 5 and holds enough acid to destabilize a milk or plant emulsion. Cream feathers into curds, oil separates, and the surface goes speckled. Dipotassium phosphate buffers against that. Added to a creamer or a barista-grade plant milk, it holds the pH high enough that proteins stay soluble and the fat droplets stay dispersed, so the drink stays smooth.

Baristas encountering split oat milk are usually looking at a carton without that buffer, or at very hot, very acidic coffee. Sports drinks use phosphates as electrolytes. Processed cheese uses them as emulsifying salts alongside citrates, and powdered drink mixes use them to control acidity. In each case the additive is mineral, and its presence tells you nothing about whether the product contains dairy.

Potassium and Phosphate Intake

Two intake questions attach to this additive, and both concern specific groups. EFSA set a group acceptable daily intake for phosphates in 2019 at 40 mg per kilogram of body weight per day as phosphorus, and flagged that high consumers of processed food can exceed it. People with chronic kidney disease are usually advised to limit phosphate additives, because additive phosphorus is absorbed far more completely than the phosphorus bound in plant and animal tissue.

The potassium half matters for the same group. Advanced kidney disease often comes with potassium restriction, and potassium-based additives contribute. For everyone else, dietary potassium is beneficial and typically under-consumed, and the amounts in these additives are small next to a banana or a portion of beans.
