From Wood Ash to Mined Potash

The old name tells the old story. Potash was made by leaching wood ashes in water and boiling the liquid down in iron pots, giving a crude potassium carbonate used for soap, glass, and gunpowder. Refining it in a second firing produced whiter pearl ash, which early American bakers used as a leavening agent before baking soda existed. Industry moved to mineral sources in the nineteenth century.

Potassium chloride is mined from evaporite beds in Canada, Russia, Belarus, and Germany, then converted electrolytically to potassium hydroxide. Bubbling carbon dioxide through that solution gives potassium carbonate, and further carbonation gives the bicarbonate. Both the historical and the modern route are plant or mineral. Wood ash is plant, potash ore is rock, and there has never been an animal-derived commercial source for these salts.

Dutch Cocoa and Alkaline Noodles

Raw cocoa is acidic, pale, and sharp-tasting. Coenraad van Houten's alkalization treatment, patented in the 1820s, uses potassium carbonate to raise the pH, which darkens the powder toward deep brown or near black and softens the flavor. Dutch-processed cocoa, black cocoa in Oreo-style cookies, and most drinking chocolate use it. One consequence matters to bakers. Alkalized cocoa no longer reacts with baking soda, so recipes built on Dutch cocoa use baking powder instead.

The treatment also lowers the flavanol content, which is why alkalization comes up in discussions of cocoa's antioxidant claims. Ramen gets its springy texture and yellow tint from kansui, an alkaline solution of potassium and sodium carbonates. The color is not added: alkali changes how flavonoids in wheat flour reflect light. Both uses are plant food treated with a mineral salt.

Other Places E501 Shows Up

Raisin producers dip grapes in a potassium carbonate solution before drying, which cracks the waxy skin and cuts drying time from weeks to days. Dried vine fruit labels sometimes disclose this as a processing step. Winemakers use potassium bicarbonate to deacidify musts from cool vintages, and homebrewers use it for water chemistry.

Low-sodium baking powders swap potassium bicarbonate for sodium bicarbonate, and some mineral waters and sports drinks include it as an electrolyte. A dietary note fits here. Potassium bicarbonate supplements are sold for potassium intake, and people on potassium-restricted diets, usually because of kidney disease, are advised to watch them. The additive quantities in food are small.
