Made by heating food-grade carbohydrates until they brown. The sugars used are glucose syrup, sucrose, invert sugar, molasses, or starch hydrolysates, usually from corn, wheat, or cane. Class I caramel is the plainest of the four types: acids or alkalis may be used to speed the reaction, but ammonium and sulfite compounds are forbidden in it.
