Swapping Magnesium for Copper

Chlorophyll is built around a porphyrin ring with a magnesium atom at its center. Acid, heat, and time knock that magnesium out, which is exactly what happens when green beans go army-green in the can. Manufacturers extract chlorophyll from dried alfalfa, grass, or nettle leaves with a solvent such as acetone, ethanol, or hexane, then treat the extract with a copper salt.

Copper sits in the ring far more tightly than magnesium did, giving a pigment that stays green through cooking, canning, and months of shelf life. Two forms follow. E141(i), copper chlorophylls, keeps the fatty phytol tail and dissolves in oil. E141(ii), copper chlorophyllins, is saponified to remove that tail and sold as a sodium or potassium salt that dissolves in water. Both start from green leaves and a mineral copper salt, so both are plant-derived.

Copper Content and Safety

Adding copper to a food color raises an obvious question. Regulators addressed it directly. EU specifications limit both total copper and free ionic copper in E141, since bound copper inside the porphyrin ring behaves differently from a free copper salt. EFSA re-evaluated the additive in 2015 and found the available data insufficient to set an acceptable daily intake, while concluding that exposure at reported use levels did not raise a safety concern for copper intake.

The panel asked for better characterization of the material, which is a common outcome for older plant-derived colors. People with Wilson's disease, who cannot clear copper properly, are sometimes advised to limit copper-containing additives. That is a specific medical situation and does not change the sourcing answer for anyone else.

Chlorophyllin Supplements and Mouthwash

Sodium copper chlorophyllin has a life outside food coloring. Sold as a supplement and as an internal deodorant, it has been marketed for body odor and bad breath since the 1950s, with mixed evidence behind those claims. Mouthwashes and toothpastes use it for the same reason and for the green shade. Green powder supplements sometimes list chlorophyllin alongside wheatgrass and spirulina. All three are plant or algal. One label caution applies. "Liquid chlorophyll" sold in health shops is usually chlorophyllin, the copper version, and not raw chlorophyll. Both are plant-derived and vegan, so the swap matters for accuracy and not for the dietary answer.
