Cellulose is the structural polymer in plant cell walls and the most abundant organic compound on the planet. Food-grade production starts from bleached wood pulp or cotton linters, the short fibers left on the seed after ginning. The pulp is steeped in sodium hydroxide, which swells the fiber and opens up its hydroxyl groups. Monochloroacetic acid is then added, grafting carboxymethyl groups onto the chain.

The degree of substitution controls how well the final gum dissolves and how thick a solution it gives. Salt byproducts are washed out and the product is milled to a white powder. Both raw materials are plant. Both reagents are industrial chemicals with no animal input. E466 is one of the least ambiguous entries in the thickener range, and no manufacturer has a reason to use an animal-derived feedstock for it.
