A fully synthetic chelating agent. Manufacture reacts ethylenediamine with formaldehyde and sodium cyanide, then hydrolyzes the product to ethylenediaminetetraacetic acid, which is converted to the calcium disodium salt. Every feedstock is petrochemical or mineral.

A Laboratory Molecule

EDTA was first synthesized in Germany in the 1930s and has no natural source. Production starts from ethylenediamine, made from ethylene via ethylene dichloride and ammonia, then adds four acetic acid arms through a reaction with formaldehyde and sodium cyanide.

The free acid is neutralized to the calcium disodium salt, which is the form permitted in food. The calcium already occupying the center is deliberate: it stops the additive stripping calcium out of the food or the body, while still allowing exchange for iron and copper, which EDTA binds far more tightly.

Nothing biological enters the synthesis. No fermentation, no plant extract, no animal fat or protein. On sourcing, E385 is one of the clearest vegan answers in the additive list, and the questions it raises are about consumption levels alone.

Why Canned Beans Contain It

Canned legumes discolor and lose flavor when trace metals from the raw material, the water, or the can itself catalyze oxidation. Chickpeas turn dull. Beans darken, and the liquid clouds. A few parts per million of EDTA ties up those metals and holds the product stable for years.

Mayonnaise and dressings use it for the same reason. Oil-in-water emulsions with metal traces go rancid quickly. Vegan mayonnaise is equally susceptible, which is why E385 turns up on plant-based labels too.

Canned fish and shellfish also use it heavily, and the additive is mineral and synthetic there as everywhere else. Where a canned product is not vegan, the reason is the fish and never the chelator.

Intake Limits and the Medical Use

EFSA re-evaluated E385 in 2018 and kept an acceptable daily intake of 1.9 mg per kilogram of body weight per day, noting that estimated exposure stays below that for most consumers. Permitted uses in the EU are limited to a short list of food categories, which keeps total exposure down.

A related use lies outside food. Calcium disodium edetate is a licensed medicine for lead poisoning, given by injection at doses thousands of times higher than any dietary exposure. Chelation therapy marketed for heart disease or autism uses related compounds and has no supporting evidence, with documented deaths from incorrect formulation.
